I feel like fajitas could be a comfort food in our house. The smell of grilled onions, peppers and meat make me happy. Sometimes, it even makes the house full of smoke from the indoor grill pan but I don’t mind because I love the flavor. They also play nicely into a ketogenic or paleo lifestyle. If you are following a ketogenic diet, just add guacamole, cheese and eat them without a tortilla, or over a bed of cauliflower rice. If you are eating paleo, eat them with an almond or coconut flour tortilla and skip the cheese and sour cream. My personal favorite is on a plate with sour cream, cheese, and guacamole. Yum!
