Happy Saturday! I am so looking forward to the first long weekend after school started! I miss the days when school started after Labor day! This weekend is full of BBQs and parties! 🙂 I am going to post some of the dishes I am making this weekend to take to such soirees! These recipes are amounts for a larger group. If you want a smaller amount you can adjust the recipe! Have a relaxing and safe weekend!!!
Gluten Free Tiramisu
This recipe will make enough for two pans of tiramisu.
5 egg yolks
1/3 cup sugar
3 tubs (500g) marscapone
5 cups of heavy whipping cream
1 cup Kahlua or Marsala
4 cups espresso, more if needed
Schar gluten free lady finger- I used 4 packages for 2 pans of tiramisu
cocoa powder or shaved dark chocolate
Step One- Brew some strong coffee or espresso 🙂
Step Two: Crack 5 eggs and 5 egg yolks into a mixing bowl. Add 1/3 cup of sugar. Whip until a think ribbon forms in eggs (soft peaks)
Step Three: Add Marscapone cheese and beat. I leave my marscapone on the counter for a few minutes so it is softer.
Step Four: Whip the cream until it has stiff peaks. Add 1/4 cup of sugar and 2tbsp vanilla to sweeten.
Step Five: Combine Marscapone/Egg mixutre and Whip cream together
Step Six: Soak Schar ladyfingers in espresso (If you want you can add expresso flavored alcohol or traditionally Marsala. I use Kahlua) until they have absorbed some coffee but are not falling apart. Continue until the bottom of the pan is covered.
Step Seven: Put a layer of the cream mixture to cover ladyfingers.
Step Eight: Add another layer of espresso soaked ladyfingers. Cover with second layer of cream mixture.
Step Nine: Dust top layer with cocoa powder or shaved dark chocolate.
The Tiramisu is finished! It sounds like it is hard to make but really once all of the layers are ready to assemble it is easy! Refridgerate and enjoy! I like to make it the night before so all of the flavors can marry.
