I was shocked by an article I read this week published by the Celiac Disease Foundation. It stated that people with Celiac are unknowingly ingesting 4 times as much gluten than what is “safe” for a person with celiac to consume. I add the “safe” because I personally believe that there is no such thing as a safe amount of gluten for people with Celiac Disease. I also think other countries have much safer regulations for us than we do in the USA. That’s another story for another day.
This number felt really high until I started thinking about my journey.
I was getting more than 4 times the amount of “safe” gluten in my diet before I had my Nima Sensor! I look back at all of the foods I was eating that tested unsafe with Nima. Had I added up the amount of gluten it was shocking! A daily protein shake, protein bars, restaurants, eating at other people’s houses! It’s scary to think of how much damage was still being done to my intestines. Makes me want to cry and then it makes me angry and frustrated with labeling and allowable gluten amounts here. Until we as Celiacs can safely trust food to not contain any gluten, I will test everything with my Nima.
