This Texas Caviar is my take on the popular dish. You can serve it as a main dish, side dish or appetizer. So versatile and colorful. We had some friends from hockey over for the end of season party. I made layered bean dip, cheese nasty aka nacho cheese, and Texas Caviar. I love the citrus in the background of this dish. So yummy!
Since I am doing the two week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! It is delicious and I can’t wait to eat it. I feel like I have been eating a lot of beans these last few days. This is totally a new thing for me because I have been eating Paleo/Keto for so long I totally cut beans out of my diet. We will see what happens in a few weeks after the trial is over. 🙂
Here are some items to help you make this dish:

- 2 cans organic black beans drained and rinsed
- 1 bag organic frozen corn thawed
- 1/2 red onion chopped
- 1 handful cherry tomatoes chopped
- 1 can Green chilies
- 1 tsp Garlic
- 1 tsp Smoked Paprika
- 1 tsp Cumin
- 2 Limes juiced
- 1 orange juiced
- 1 pinch S & P
- Combine all ingredients in a bowl. Stir. Chill in the fridge until you are ready to serve.
