Thai Chicken Lettuce Wraps
One pan meal…. fast and delicious….easy to clean up!
  1. Chop all of the veggies, cashews, and chicken. Set aside
  2. Mix peanut butter, lime juice and coconut aminos in a bowl until combined. Add in seasoning. Set aside.
  3. In a pan add ghee and brown the cashews. Once brown remove to a paper towel and set aside.
  4. Brown chicken in the oil left from the cashews. Cook until tender.
  5. Add in celery, peppers and almost all of the onions. Save a few onion pieces for garnish.
  6. Sautee together until the veggies start to soften. But are not soggy.
  7. Pour peanut butter mixture over and stir to combine.
  8. Sprinkle cashews in and stir.
  9. Put mixture into a lettuce leaf and sprinkle with green onions.
