Gluten Free Copycat Cowboy Ciao Stetson Salad

This gluten free salmon chopped salad was inspired by the Stetson salad at Cowboy Ciao.  I copied this recipe and made it my own after ordering it there!  I used to love getting it made gluten free!  You can substitute any of the ingredients I used to make it your own! ​

Happy Thursday!  I hope your week is going well and your weekend will be even better!  I’m looking forward to the weekend!  This is my copycat of the Cowboy Ciao Stetson Salad.   I changed some of the ingredients to make it gluten free but it is just as delicious!  They use couscous which is not gluten-free so I switched it up!  You could substitute the couscous for rice or quinoa if you still wanted to have a grain.  

HERE ARE THE INGREDIENTS FOR THE ORIGINAL STETSON CHOPPED SALAD From Cowboy Ciao:

The original Stetson Salad came with CousCous but it’s not gluten free so I usually leave out the grain, however, you could use quinoa or rice instead. 2 oz.

2 oz Arugula- chopped

2 oz Roma Tomatoes- diced

2 oz Smoked Salmon

1/2 oz Asiago Cheese- shredded

1/2 oz Pepitas- pumpkin seeds

1/2 oz Black Currants

1 oz Air Dried Corn

I don’t usually measure out the ingredients because it depends on how many people I am serving this salad to and how I want it to look on my platter.

All topped with a delicious Pesto Buttermilk Dressing. The ingredients for the dressing are:

1/2 C Pesto

1 Shallot minced

1 Cup Garlic Aioli

1 C Buttermilk

1/2 tsp Black pepper

1/2 lemon juice

S & P

This dressing makes 20 oz. You can store the leftover dressing in the fridge.

HERE ARE SOME OTHER SUBSTITUTION IDEAS:

You could add dehydrated corn for the crunch instead of or in addition to the dehydrated blueberries if you like dehydrated corn.  The Inka Corn brand has giant dehydrated corn that would be fun to add.

I think roasted red peppers would also be delicious! 

Avocado would add in some delicious healthy fat! 

You could use other types of smoked fish.  I haven’t tried that yet, but smoked trout would also be yummy!

Fresh herbs like dill would be lovely to sprinkle over the top of the salmon.  

I have also served it with a homemade dill ranch that was super yummy with it!

This gluten free smoked salmon chopped salad is so quick to make and beautiful to serve.  I usually serve it in columns like the picture so people can leave out ingredients that they don’t like.  However, everyone in my house loves this salad!

HERE’S HOW TO MAKE THIS DELICIOUS COWBOY CIAO SALAD:

Find a fun platter to serve your layered salad on.

Make the delicious Buttermilk Pesto Dressing or Creamy Dill Ranch Dressing. Put it in the fridge for later.

Chop all of the ingredients that need to be chopped and assemble them in columns on your platter.

Add the other ingredients to your platter such as quinoa, dehydrated corn, or currants.

Serve along with the delicious dressing.
