Today’s easy weeknight dinner is yummy sheet pan salmon with roasted potatoes and a lemon parm arugula salad! So easy to make and a perfect weeknight dinner!

This is primarily an adult meal because of chopping and baking in the oven, however, kids could help make the salad!
Time Needed to Make This Recipe:
This recipe will take less than an hour to make.
Equipment Needed:
You will need the following to make this meal:
A sheet pan
A cutting board
Sharp kitchen knife
An oven and microwave
A bowl or large plate for the salad
A bowl to toss the potatoes in
A grater for the parmesan cheese if you like fresh grated cheese.

The Ingredients Needed Are:
1 Wild Caught Salmon Fillet
4 oz Capers
1 Red Pepper – chopped
3 Lemon- juiced
1 drizzle of Olive Oil
¼ Cup of Honey
Salt and Pepper
Parsley
½ Red Onion- chopped
24 oz Fingerling Potatoes
1 small pkg Arugula
Shredded Parmesan
Balsamic Vinegar

Directions
- Wash the potatoes.
Preheat the oven to 375 degrees F.
Put the potatoes on a plate and poke them with a knife.
Microwave them for 3 minutes to pre cook them so they finish at the same time as the salmon.
Make the dressing for the potatoes. (the juice from 2 lemons a drizzle of olive oil and salt and pepper)
Make the sauce for the salmon. (olive oil, honey, salt and pepper, red onion, capers (reserve some capers to sprinkle on after it cooks), the juice from 1 lemon)
When the potatoes are precooked, slice them in half.
Put them in a bowl with the dressing to marinate.
Chop up the red pepper.
Drizzle a small amount of olive oil on a sheet pan.
Place the salmon on the pan.
Salt and pepper the salmon.
Pour the sauce on the salmon.
Arrange the potatoes around the salmon on the pan.
