I feel like gluten-free fajitas could be a comfort food in our house. The smell of grilled onions, peppers, and meat makes me happy. Sometimes, it even makes the house full of smoke from the indoor grill pan but I don’t mind because I love the flavor. These have steak, chicken and shrimp in the ingredients however, you can just choose to make one kind or go all out for a combo!

They also play nicely into a ketogenic or paleo lifestyle. If you are following a ketogenic diet, just add guacamole, and cheese and eat them without a tortilla, or over a bed of cauliflower rice. If you are eating paleo, eat them with an almond or coconut flour tortilla and skip the cheese and sour cream.
My personal favorite is on a plate with sour cream, cheese, and guacamole. Yum!
Feel free to make these gluten-free fajitas with your own fajita seasoning. I like the Frontera or Siete seasonings when I am in a hurry.

I hope you enjoy this fajita recipe! Feel free to make it with beef, chicken or shrimp! I like to let the beef or chicken marinate for a few hours before making them. I feel like shrimp absorbs the flavor of the fajita seasonings pretty quickly!
If you are serving them with tortillas and have the time, I recommend warming them up slightly so they are nice and soft!
A quick meal to make! They Go together in a few minutes and are healthy and delicious. Pair it with your favorite toppings! You can make it with one meat or with a combination of all three.
HERE ARE THE INGREDIENTS:
- 3 whole Peppers red, green, yellow- chopped
- 2 whole yellow onions chopped into bite-sized pieces
- 1 large Flank or hanger steak cut into slices against the grain
- 2 whole chicken breasts- boneless cut into slices
- 1 pkg shrimp deveined and peeled
- 3 pkgs fajita marinade Or you can make your own marinade.
HERE’S THE INSTRUCTIONS:
- Chop peppers into slices.
- Chop onions into slices.
- Slice Steak against the grain into thin pieces.
- Slice chicken into thin pieces.
- Marinate each kind of meat separately in one package of fajita marinade. Let sit for at least 30 minutes or overnight.
- Heat your grill pan with a little avocado or coconut oil to medium heat.
- Add onions and peppers and cook until golden brown on the edges.
- Remove onions and peppers and set aside in a bowl. Add steak and chicken and grill until cooked. Add to the bowl. Cook the shrimp last so it doesn’t get overcooked.
- Place all items back in the pan and sautee with the other package of fajita marinade if desired.
- Serve with tortillas, a lettuce salad, cheese, guacamole, sour cream, or any other toppings you would like! Enjoy!
