This super Sheet Pan Greek Chicken is the perfect meal for a weeknight! You can pair it with a Greek Salad and gluten free pita if you would like! So yummy!

Baking Sheet

Cutting board

Kitchen knife

Oven mitts

The Ingredients Needed Are:

6 Bone-in Chicken thighs or three breasts cut in half

1 cup Eggplant

1 cup zucchini

1 cup cherry tomatoes

½ jar Kalamata olives

1 red pepper- sliced into strips

1 yellow pepper- sliced into strips

1 drizzle olive oil

Salt and Pepper

2 TBSP Greek Seasoning

1 Lemon juiced.

1 Cup Diced mini potatoes

1 Small log of goat cheese

Parsley to garnish

Ingredients

  • 6 Bone-in Chicken thighs
    1 cup Eggplant
    1 cup zucchini
    1 cup cherry tomatoes
    ½ jar Kalamata olives
    1 red pepper- sliced in strips
    1 yellow pepper- sliced in strips
    1 drizzle olive oil
    Salt and Pepper
    2 TBSP Greek Seasoning
    1 Lemon juiced.
    1 Cup Diced mini potatoes
    1 Small log of goat cheese
    Parsley to garnish

Directions


  • Preheat the oven to 400 degrees.
    Make the dressing in a bowl by whisking the lemon juice, olive oil, greek seasoning, salt, and pepper.
    Marinate the chicken in the dressing for at least 15 minutes but up to an hour.
    Chop up the veggies.
    Drizzle a little olive oil on a sheet pan.
    Place chicken and veggies on the pan.
    Bake at 400 degrees F for 45 minutes.
    Sprinkle the feta on the pan and continue baking for 5-10 more minutes.
    Garnish with parsley.
