Directions

  • Let your steak come to room temperature for 30 minutes.
Prepare the green bean, mushroom, onions, and feta bake on a sheet pan.  Cook it in the oven while it is coming to temperature and it should be done at the same time as the steak.
Preheat the oven to 400 degrees F
Pat the steak dry with a paper towel.
Season it with salt and pepper on both sides.
Heat an oven-safe pan until super hot on the stovetop.
Add in a small drizzle of olive oil and about 1 TBSP of butter.
Be careful not to burn yourself!
    Add the steak.
Sear for 1-2 minutes on each side.
Add in the clove of garlic, rosemary, and thyme while searing the steak.
Scoop it onto the steak and move it around the pan.
Remove the herbs before you put the pan in the oven.  Set them aside.
Put the pan in the oven.
Use a digital thermometer to ensure the steak is not overcooked. Remove it a few degrees before it is finished so it can continue to cook while it rests.
Cook your steak for 4 minutes in the oven for rare.
Add a minute or two to cook the steak to a more done temperature.
    115-125 degrees rare
    125-135 degrees medium-rare
    135-145 degrees medium
    145-155 medium well
    155-165 well done
Let it rest for 5 minutes and cover it with foil on a cutting board.
While the steak is resting Saute the chef’s sampler of mushrooms in the pan.
Slice your steak across the grain and serve with the green bean bake if desired.
    Enjoy!
