This Instant Pot chicken and rice is the perfect weeknight dinner! Everything cooks perfectly in the Instant Pot and it makes the clean up of dishes easy.

This recipe will take about 35 minutes to make.

Equipment Needed:

You will need the following to make this meal:

An Instant Pot

Cutting board

Kitchen knife

Oven mitts

Measuring cups

The Ingredients Needed Are:

4 chicken breasts- cut into bite-sized pieces.

2 Cups Jasmine Rice

¼ Cup Tomato Paste

2 Tomatoes chopped

1 yellow onion chopped

3 garlic cloves minced

1 Cup Carrots chopped

1 Celery stalk chopped

¼ Cup Coconut Aminos, GF soy sauce, or tamari.

2 Cups Chicken Stock

2 TBSP Italian Seasoning

2 Green onions chopped

1 handful parsley chopped if desired for garnish

Salt and Pepper.

Ingredients

  • 4 chicken breasts- cut into bite-sized pieces.
    2 Cups Jasmine Rice
    ¼ Cup Tomato Paste
    2 Tomatoes chopped
    1 yellow onion chopped
    3 garlic cloves minced
    1 Cup Carrots chopped
    1 Celery stalk chopped
    ¼ Cup Coconut Aminos, GF soy sauce or tamari.
    2 Cups Chicken Stock
    2 TBSP Italian Seasoning
    2 Green onions chopped
    1 handful parsley chopped if desired for garnish
    Salt and Pepper.

Directions

  • Turn your Instant Pot on to Saute mode.
    Drizzle with olive oil.
    Saute chicken.
    Add salt and pepper and Italian seasoning.
    Cook for a few minutes until beginning to brown.
    Add in yellow onion and garlic.  Stir.
    Add in chicken stock and scrape the bits off of the bottom.
    Turn off the Instant Pot.
    Add the rest of the ingredients except the green onions and parsley.
    Put the lid on.
    Cook on high for 8 minutes then natural release for 10 minutes. 
    Put in a serving bowl.
    Garnish with parsley and green onions.
    Enjoy!
