Thai chicken lettuce wraps are full of delicious veggies and packed with flavor. They are a yummy lunch or appetizer.

Time Needed to Make This Recipe:
This recipe will take about 30 minutes to make.
Equipment Needed:
You will need the following to make this meal:
Bowls for mixing
Cutting board
Kitchen knife
Measuring cups
The Ingredients Needed Are:
1 head of Butter Lettuce
1 lb Ground Chicken
1 tsp Sugar
2 TBSP Fish Sauce
2-3 Limes- juiced
½ tsp chili paste
2 Lg Shallots- minced
3 Green Onions- chopped
1 Handful of cilantro- chopped
7-10 leaves of mint- chopped
5-7 leaves of basil- chopped
Olive Oil
Red Pepper- thin slices
½ Cup Grated Carrots
1 Bag coleslaw mix
½” Ginger- grated
½ Cup of GF Soy Sauce, Tamari, or Coconut Aminos
2 Cloves of Garlic- minced
1 tsp Sesame Oil
Rice if you desire. I didn’t use it but you can if you’d like.

Directions
- Heat a deep skillet over medium heat.
Add a drizzle of olive oil.
Cook the chicken. Break it up into small pieces while it is cooking.
Add in the veggies. Stir.
Allow them to cook for a few minutes until softened.
Make the sauce while the veggies are cooking. (Sugar, fish sauce, lime juice, chili paste, shallots, ginger, soy sauce, garlic, S&P, and sesame oil) Whisk it all together in a bowl.
Pour the sauce over the chicken and veggies.
Stir to combine.
Arrange the lettuce on a plate for cups.
Scoop some of the chicken and veggies into each cup.
Garnish with green onions and fresh herbs.
