This gluten free Pad Thai is super easy to make and full of delicious flavors! I love to squeeze a little extra lime on mine for added zing!

Age Recommendation:

This is a fun meal for all ages but adult supervision with the stove is needed.

Time Needed to Make This Recipe:

This recipe will take about 30 minutes to make.

Equipment Needed:

You will need the following to make this meal:

Bowls for mixing

Cutting board

Kitchen knife

Measuring cups and spoons

Pot for boiling the noodles

A whisk

Tongs

A strainer to drain the noodles

The Ingredients Needed Are:

14 oz Rice Noodles

Lime Wedges

3 Garlic Cloves

½” grated Ginger

2 Eggs- whisked

8 oz precooked chicken- I used rotisserie chicken. You could also use precooked shrimp.

Salt and pepper

½ cup Bean Sprouts

2 Chopped Green Onions

½ Cup Chopped Peanuts

1 Handful Cilantro- chopped

Olive Oil

1 Red Pepper chopped in strips

Siracha or red pepper flakes if desired

Sauce:

4 TBSP Creamy Peanut Butter

1/3 Cup Brown Sugar- you may need to adjust depending on how sweet your peanut butter is.

½ Cup Fish Sauce

½ Cup Rice Vinegar

4 TBSP Tamari or Coconut Aminos

Ingredients
14 oz Rice Noodles

Sauce:

Directions

  • Heat oil in your wok. 
    If you are using raw chicken, cook it now.
     Then set it aside.
    Cook the Pad Thai Noodles according to directions. 
    Drain and set aside.
    Add garlic and ginger to the wok.
    Add in the veggies and allow to soften for a few minutes.
    Move the food to the side of the pan and reapply the oil if needed.
    Whisk the egg and scramble it in the pan.  
    Add in the noodles and stir. 
    Add the sauce to the pan. 
    Stir to coat all of the noodles.   
    Add in the chicken.
    Stir to combine.
    Sprinkle with peanuts and cilantro.
    If you like it spicy, you can add chili flakes or sriracha.
    Garnish with lime slices.
