- 1 1/3 Cups Gluten free Cup for Cup flour- I used Bob’s Red Mill
3 Tsp Baking Powder
1 Tsp Sugar
1 Egg
1 1/4 C Buttermilk or regular milk
3 TBSP Butter
1 Pinch of Salt
1 Tsp Vanilla
Directions
- Mix the dry ingredients in a bowl.Ā
Ā Beat the egg in a bowl then add the milk and vanilla.Ā Stir to combine.
Add the melted butter to the egg and milk mixture.Ā Stir to combine.
Stir the wet ingredients into the dry ingredients.Ā Donāt over mix itās ok to have some lumps in the batter.Ā Ā
Heat your skillet to medium heat.
Pour the batter into small circles.Ā Ā
Cook until bubbles form on the top.Ā
Adjust the heat as needed.
Flip the pancake once bubbles have formed.
Cook for a few minutes on the other side until it is lightly browned.
Serve with your favorite pancake toppings such as butter, syrup, whipped cream, and fruit!
