These chorizo egg muffins are a perfect breakfast food or brunch addition! I love to meal prep with these for an easy breakfast on busy weeks!

The Ingredients Needed Are:
12 eggs
1 TBSP water
1 lb ground beef or pork chorizo
1 handful of cilantro, chopped
1 yellow onion, chopped
8 oz Mexican Blend Cheese- shredded
Salt and Pepper

12 eggs
1 TBSP water
1 lb ground beef or pork chorizo
1 handful of cilantro, chopped
1 yellow onion, chopped
8 oz Mexican Blend Cheese- shredded

Directions
- Cook the chorizo in a pan over medium-high heat. Crumble it up like you would when cooking ground beef.
When the chorizo is almost finished cooking add the yellow onion.
Allow it to cook until it is soft.
Crack your eggs into a bowl and whisk.
Add in the water.
Whisk.
Spray the silicone muffin bakeware with cooking spray.
Set it on the baking sheet.
Spoon in some chorizo and onions.
Carefully pour some eggs into the muffin spaces.
Top with cheese and cilantro.
Bake in a 350-degree oven for about 20 minutes or until a knife can be inserted and comes out clean.
Serve with additional cilantro if desired.
