Gluten free Thai Chicken Lettuce Wraps are crispy, fresh, and delicious!

It’s hot and sunny here in AZ and the thought of turning on my oven makes me want to cry.  I crave easy-to-make food that is lighter in the summer.  This Thai Chicken lettuce wrap is a perfect summer food!  Super easy and made in just one pan… BOOM dinner is ready!   More time for floating in the pool or watching your favorite Netflix show.  I don’t have a series that I am watching right now, but I might have to find one!  Hockey is still on TV so that is really all we watch at our house.  lol.  When it is very hot outside I love to have a good series to watch.  Do you have any suggestions? I am not big on scary or horror but love mystery, action, and of course a good romcom!  

These Thai lettuce wraps are different from the PF Chang lettuce wraps because they are more of a Thai peanut sauce wrap.  But I love that we can make them at home!  It is such an easy recipe too!  The peanut sauce is so yummy and you can make extra as a dipping sauce.  I seem to crave Asian-inspired recipes when I want a lot of veggies packed in with the protein! They are easy to batch-make for meal prep as well!  Just keep your butter lettuce leaves separate from the chicken mixture and assemble them when you are ready to eat them.  It’s one of my favorite low-carb meal ideas!

My family loves Thai food so these were a huge hit.  They are going to be a part of our regular menu rotation and I hope you love them as much as we did. They are a new family favorite!   However, check out some other recipes on my site because you might find a new favorite!

INGREDIENTS  

  • 2 handfuls of Raw Cashews chopped
  • 3 whole skinless chicken breasts chopped into small pieces. or you can also use ground turkey or ground pork.
  • 4 green onions chopped
  • 1 bag of rainbow coleslaw mix
  • 1/2 red pepper Chopped
  • 1/2 yellow pepper Chopped
  • 2 Celery stalks Chopped
  • 1/2 Cup Peanut Butter
  • 1/4 Cup coconut aminos
  • 3 limes juiced
  • 1/4 C Sesame Oil
  • 1 tsp garlic powder
  • 1 tsp Ginger powder or fresh ginger that is grated.  
  • 1 tsp Chili Lime seasoning
  • S & P to taste
  • 1 head of butter leaf lettuce washed and dried
  • 1 tbsp ghee
  • If you like it spicy, you can also add some red pepper flakes

INSTRUCTIONS 

  • Chop all of the veggies, cashews, and chicken. Set aside
  • Mix peanut butter, lime juice, coconut aminos, and sesame oil in a bowl until combined. Add in seasoning. Set aside.
  • In a pan add ghee and brown the cashews. Once brown remove to a paper towel and set aside.
  • Over medium-high heat, Brown chicken in the oil left from the cashews. Cook until tender.
  • Add in celery, peppers, cabbage or coleslaw mix, and almost all of the onions. Save a few onion pieces for garnish.
  • Sautee together until the veggies start to soften. But are not soggy.
  • Pour peanut butter mixture over and stir to combine.
  • Sprinkle in the cashews in and stir.
  • Put a big scoop of the chicken mixture into a lettuce leaf and sprinkle with green onions.
  • Enjoy 

Lunch Dinner or an Appetizer!

These Thai-inspired lettuce wraps also make a great appetizer!  I love to plate them in lettuce cups on a pretty serving platter when friends are over!  They pair nicely with a crisp white wine or dry rose in my opinion!  They are so full of vibrant colors and are low-carb!  We love it as our main meal and if you want to add more to the filling you can also add in some cooked white rice or some rice noodles!

​Here’s How To Store Them:

If you have leftovers, store the chicken mixture in an airtight container.  Place the lettuce cups in a ziplock bag with a dry paper towel and they should stay nice and crispy for a few days.
