Hey there! Today’s recipe is Gluten Free Keto Peanut Butter Cookies which only need 3 ingredients and don’t take very long to make. Well, 4 ingredients if you want to dip them in your favorite low carb chocolate!

HERE’S THE INGREDIENTS TO MAKE These Gluten Free Keto Peanut Butter Cookies:

1 c Peanut Butter – no sugar added

1/2 c Monkfruit, Swerve, Erythritol, or your favorite keto-friendly sweetener, you can find Swerve here if you would like to help support the blog.

HERE’S HOW TO MAKE These Keto Peanut Butter Cookies :

  1. Preheat your oven to 350°F,
  2. Mix your ingredients together in a medium-sized bowl.
  3. Form 12 balls. I found it that they stayed together better if I squished them slightly with my hands before putting the # on them with a fork.
  4. Put them on a baking sheet.
  5. Use a fork to make # in your cookies.
  6. Bake for 10-12 minutes.
  7. Allow your cookies to cool.
  8. Enjoy!

​Note: you can drizzle with melted chocolate if you want to be fancy. I used Hu Chocolate, but you can melt and dip any low carb chocolate you like

Does Peanut Butter ruin ketosis?

If you eat peanut butter regularly on keto, you may not be successful in staying in ketosis. However, if you have peanut butter every once in a while, you can stay in ketosis. For this recipe, you’ll be using 40 total carbs of peanut butter which is about 3 carbs per cookie. Eggs are only 1 carb so in total it’s about 3.5 carbs per cookie.

Why do my keto peanut butter fall apart?

When making a # in your cookies, be sure to do so gently or they may fall apart. If you don’t allow your cookies to cool after taking them out of the oven, they may fall apart. I had this happen to me when they were hot and I was trying to shove one in my mouth before it cooled! They stick together once they are cool! LOL!
