Gluten Free Pico De Gallo

Hey there! Today we’re making my Gluten Free Pico De Gallo recipe. I love this as a healthy snack on tortilla chips or cucumber slices. It is also fantastic on top of tacos, grilled fish, and chicken!

HERE’S THE INGREDIENTS TO MAKE THIS GLUTEN FREE PICO DE GALLO:

​1-2 Limes, Juiced

Salt and Pepper

4 Medium Tomatoes, Diced and seeds removed 

1-2 Jalapenos, Deseeded & Minced

1/2 White Onion, Diced

A Handful of Cilantro, Chopped

HERE’S HOW TO MAKE GLUTEN FREE PICO DE GALLO:

Chop all of your ingredients up! Then, put all of your ingredients in a large serving bowl and mix thoroughly. I like to allow the flavors to marry and chill in the fridge for a little while first. Make sure to taste test in case it needs more lime juice or salt. 

Serve with your favorite gluten free chips, sliced cucumber, with tacos, grilled fish, or grilled chicken! 

RECIPE VARIATIONS:

SPICY:

Red Onion instead of White Onion if you like spicy food.

Serrano Peppers instead or in addition to Jalapeno Pepper if you want a super spicy Pico de Gallo.

NOT SPICY:

​Plum Tomatoes instead Roma if you want a less juicy tomato.

Pineapple Pico de Gallo – add 1 c Pineapple diced chunks for a tangy twist!

Green Onion- add 2 green onions chopped.

Garlic- add 2 cloves minced or pressed.

IS PICO DE GALLO AND SALSA THE SAME THING?

​Pico de Gallo has a couple of different names: Salsa Fresca or Salsa Cruda to name a couple. Its meaning literally translates to the beak of the rooster because of the way it was originally eaten. There are a few noticeable differences such as salsa is normally more of a liquid and pico de Gallo is always made fresh so the vegetables haven’t released their juices. Technically Pico de Gallo could be considered a type of salsa though.

Serve With:

Burrito Bowls: a little taco meat, lettuce, Pico de Gallo, black beans, topped with Sour Cream? Delicious!

Fish Tacos: an older recipe of mine but it’s one of my favorite ways to serve this topping.

Gluten Free Rolled Chicken Tacos- Always a crowd pleaser!

Tortilla Chips- if you want it as more of an appetizer.
