Gluten free Texas Caviar is colorful and packed with flavor! You can add jalapeños if you want it spicier! Delicious served with tortilla chips!
This Texas Caviar is my take on the popular dish. You can serve it as a main dish, side dish, or appetizer. So versatile and colorful. We had some friends from hockey over for the end-of-season party. I made layered bean dip, cheese nasty aka nacho cheese, and Texas Caviar. I love the citrus in the background of this dish. So yummy!
Since I am doing the two-week trial of vegetarian/vegan, I am going to eat this in my burrito bowl later today for some protein. Not going to lie, I am excited about it too! It is delicious and I can’t wait to eat it. I feel like I have been eating a lot of beans these last few days. This is totally a new thing for me because I have been eating Paleo/Keto for so long I totally cut beans out of my diet. We will see what happens in a few weeks after the trial is over.
